Kaya Spread


  • 3 nos of egg
  • 300 ml thick coconut milk
  • 240gm sugar, (I reduced this to 180 gm)
  • 2 pandan leaves

    For Caramel:
  • 60 g sugar
  • 125 water
  1. Prepare caramel by heating sugar till browning and later, slowly add water. Give a good stir. Remove from stove and set aside.
  2. Combine eggs, sugar and coconut milk, stir well to dilute the sugar. Filter.
  3. Pour half of the egg mixture into the caramel and whisk. Later, pour this mixture into the remaining egg mixture, keep stiring.
  4. Transfer in into a pot and add knotted pandan leaves. Simmer with a slow heat and keep stiring until it turn thick and glossy.
  5. Remove from stove and cool. Keep it regrigerated.

Salad Telur

I did the followings:
  1. Halve hard boiled eggs, seperate the white and yolk.
  2. Mash the eggyolk and mix with mayonise.
  3. Using a mould, press the eggyolk mixture into the white egg.
  4. Garnish with salad leaves and tomato. Sauce.

Palmiers

Use puff pastry and sugar, make palmiers as in the picture below:
  1. Sprinkle sugar on top of puff pastry (picture 1).
  2. Fold in as in picture 2.
  3. Fold in again like a small book as in the pic 3. Reep in the refrigerator to make it firm, about 30 minutes.
  4. Slice it as in the pic 4.
  5. Cook it in the preheated oven (high temperature) til golden brown and crispy.
