Whole Grain Pancake

Enjoy this pancake with real maple syrup, jam, or honey..& Top with any fruits..it's all your choice!
  • 1 cup plain flour
  • 1/2 cup whole grain flour or whole wheat flour
  • 2 tsb baking powder
  • salt to taste
  • 1 tsb sugar
  • 2 tsp cinnamon powder
  • 2 cups skim milk
  • 2 large eggs
  • butter or oil for the pan
  1. Whisk together the flour and whole grain flour, baking powder, salt, sugar and cinnamon in a large bowl.
  2. Pour the milk into a medium bowl, add eggs and whisk until smooth.
  3. Stir the wet ingredients into the dry ingredients. Do not overmix: you should end up with a batter that is a little lumpy.
  4. Heat skillet over medium-high heat and grease with butter. Using a 1/3 measuring cup, drop the batter onto a pan, leaving room for pancakes to spread.
  5. Wait until you see bubbles forming on the tops of the pancakes, 2-3 minutes. Then flip and cook until the bottom are brown, another minute or so.
  6. Repeat with the remaining batter.
