Siakap Tiga Rasa

'Tiga rasa' means the balance taste of hot (but not to hot :D), sweet and sour. I like having this dish with dori fish or mackarel. But this time around, we tried barramandi since someone in the house is craving those 'tiga rasa' like the one back home in Malaysia. Layanzzz...

Prepare Fish:

  1. Coat cleaned fish with salt & tumeric powder.
  2. Fully coated with corn flour.
  3. Deep fry in heated oil till set.
  4. Set aside while preparing the gravy.

Prepare Gravy:

  1. In heated oil, fry garlic & ginger till fragrant. Throw in chilli powder and little bit water if to dry. Let it cook for a while.
  2. Add in tomato sauce, fish oil, oyster sauce, sugar & salt. You have to balance the taste between mild hot, sweet & sour. Add little bit water (for gravy) and bring to the boil.
  3. Add in chopped tomatoes, cucumbers and onion. Let it cook for a while. Sprinkle with chopped coriender.
  4. Pour gravy on top of fried fish and serve.

Nasi Lemak Kukus

What i did basically..

  • 2 cups rice, soaked. Suppose to be overnight, but because i just cant stand to wait for this nasi lemak, i only done it for half an hour.
  • Prepare steamer, heat it up with enough water.
  • Rinse the rice and drain the water. Put it in heat proof container.
  • Knot pandan leave, throw inside, slice the fresh ginger, onion (optional), and steam it until rice become more than half cook.
  • Pour in 300ml coconut milk, salt to taste. Stir.
  • Again...let it be in the steamer and leave it until rice fully cook.
  • Tips - you can always layer banana leave at the bottom of the container while steaming it, to get the banana leave aroma.

Sambal Sotong Kering

Simple translation, sambal = chilli, sotong = squid, kering = dried. It's basically is dried squid cooked in chilli sauce. Best to serve with plain rice or coconut rice.

What i did basically was, i cooked the chilli sauce first, then only i added in those soaked and cleaned squid. While soaking the squid, i added little bit lye water, just to make sure it is fully enlarge and soft. I know someone will ask me, where to get this lye water? :) As for us in sydney, it is available in all oriental shop.

So here is the recipe:

  • Soak 150gm dried squid with water, add 1 spoon of lye water. Leave it overnight. Then clean it.
  • Prepare the chilli sauce - blend 2 big onion with garlic and little bit shrimp paste. Fry it in heated oil till fragrant. Add 3 tablespoon chilli powder, add little bit of water if to dry. Let those chilli cooked thoroughly. Add half cup water, let it simmer in low heat. (It will take quite sometime to let the sauce become thick).
  • When it ready, add in prepared squid. Stir. Salt & sugar to taste. I am using gula melaka in stead of sugarcane. Taste will be better and the color will be darker. Add in 1 or 2 tamarind slices.
  • Tips -Do not overcooked those squid and always add tamarind slice at last, otherwise squid will become rubbery.

Cos lattuce, carrot, capsicum, onion, hard boiled eggs & chunk tuna. Sprinkle with finely chopped fresh parsley.

Cendawan Goreng

Batter : Combination of corn flour, rice flour & plain flour, water, salt & lime paste (kapur makan) - prepare batter, not to thick and not to watery.

Clean mushroon (oyster mushroom), pat dry wth kitchen towel, dip it into the batter and fry in heated oil till it browning.

Sambal Sardine

Of all the food, i suddenly craving to this sambal sardine. huhhhhh! lunch, dinner & breakfast with just rice and sardine! What a day..

Ingredients: Onion, garlic, ginger, chilli powder, tamarind juice, salt, canned sardine.

Method: In heated oil, fry blended onion, garlic & ginger till fragrant. Add in chilli powder (add water if o dry) and let it thoroughly cook. Pour in tamarind juice and sliced onion, cook till sauce became thick. Salt to taste. Add in sardine and simmer for a while. (i just put little bit of sardine sauce from the tin, i didn put all as i dont like the fishy smell).

Cheese Swiss Roll

The idea was from this recipe. It just a normal sponge cake, with butter cream and shreded cheddar cheese. Happend that my husband requested for any cake, for his discussion with another 4 friends. Suddenly this cake came across into my mind, but a tin of cake is to much! and i was thinking swiss roll is the best size for them.

For the cake..
  • 4 eggs seperated
  • 70 gm castor sugar
  • 50gm self raising flour
  • 10gm corn flour
  • esen vanilla
  • 2 tsb corn oil or normal cooking oil will do..
  1. Meringue white eggs with the sugar. Slowly add in egg yolk.
  2. Fold in the sifted both tyoe of flour.
  3. Stir in corn oil, mix well
  4. Line the base of swiss roll tin, spread batter into it. Bake for 180 degree celcius for 10-12 minutes.
  5. Let it cool before we assemble with the butter cream and cheddar cheese.

For butter cream, just beat 125 gm of butter with 1/4 cup of icing sugar. Add in 2 tsb of fresh milk. Beat as white/pale as you can. But this measurement of butter cream is to much for this swill roll, it is recommended to make only half of it.

Spread this butter cream in between, roll in, and spread the remaining butter cream on top of the roll. Sprinkle with shreded cheddar cheese. Kraft brand will be better!

Whole Grain Pancake

Enjoy this pancake with real maple syrup, jam, or honey..& Top with any fruits..it's all your choice!
  • 1 cup plain flour
  • 1/2 cup whole grain flour or whole wheat flour
  • 2 tsb baking powder
  • salt to taste
  • 1 tsb sugar
  • 2 tsp cinnamon powder
  • 2 cups skim milk
  • 2 large eggs
  • butter or oil for the pan
  1. Whisk together the flour and whole grain flour, baking powder, salt, sugar and cinnamon in a large bowl.
  2. Pour the milk into a medium bowl, add eggs and whisk until smooth.
  3. Stir the wet ingredients into the dry ingredients. Do not overmix: you should end up with a batter that is a little lumpy.
  4. Heat skillet over medium-high heat and grease with butter. Using a 1/3 measuring cup, drop the batter onto a pan, leaving room for pancakes to spread.
  5. Wait until you see bubbles forming on the tops of the pancakes, 2-3 minutes. Then flip and cook until the bottom are brown, another minute or so.
  6. Repeat with the remaining batter.

Mini Spinach Quiche

I am still using the same recipe. But time time around, i purposely baked a tiny one! Can be kept frozen. What i did was..bake as ussual, fully cook then keep it frozen. Microwave for 1-2 minutes before serve! Easy specially when guest suddenly knock your door!

Asam Rebus Tempoyak

  1. Boil blended onion, chillies, tempoyak (fermented durian) and tumeric with water.
  2. Add in lemon grass and tumeric leave. let them boiled.
  3. Put in fishes (i like mackarel when come this dish).
  4. Put in cucumber (optional).
  5. Salt and sugar to taste.

Sandwich Telur

Syian kat hana..hehehhe here's the recipe yerr :D totally simple and easy and yet it's super yummyyy. I just type the method in making the egg spread, and it's depends on you guys on how to sandwich and what shape you would like to have.

  1. Eggs - depend how many you want, as for me & rezan, for two of us, i normally boiled 3 eggs. (hard boil).
  2. When it ready, mash those eggs yolk with sufficient mayonaise, finely chop those eggs white. Combine. Sprinkle with dill herb.
  3. It's done and ready for spread. Simple kan? :D Happy trying..
