Tuna Bread Roll


  • Avocado, mayonaise - make a paste.
  • Combine avocado paste with canned tuna. Stir well.
  • Prepare salad leaves & thinly sliced cucumber.
  • Arrange tuna & vegies on the bread and roll.
  • Cut and serve.

Prawn Toast


Ingredients:

  • 200 gm peeled raw prawn
  • 2 spring onions, chopped
  • 1 stalk lemon grass, chopped
  • 1 clove garlic, crushed
  • 1 egg white
  • 1 tablespoon chopped fresh coriender leaves
  • 1 tablespoon chilli sauce
  • 1 teaspoon oil
  • 1 teaspoon fish sauce
  • 1 teaspoon lemon juice
  • 4 slices sandwich bread, crust removed
  • Oil for shallow-frying

Method:

  1. Combine all ingredients (except bread and oil for frying) into a food processor/ blender. Make a paste.
  2. Spread the prawn paste over the bread, and cut each slice into 4 triangles.
  3. Heat 1-2 cm deep of oil in a pan/skillet. Fry the bread with prawn-side-down. Cook for 1-2 minutes or until browning and turn over, cook the other side. Drain well on paper towels.

Pau (steam bun)

I am no longer 'performing' from my ussual kichen, where I had normally prepared food/took pictures for this blog. I left the house 2 weeks ago and now transit somewhere else before we sign off from Sydney for good. I left my job as well since last monday, and now I became soooo free for blogging. My routine since then is taking care of our 'Nina' as well as sitting in front of my laptop doing nothing hhehehehe.


I found few pictures of my cooking in my C drive. Those pictures were taken weekssss ago when I was sooo busy with packing and sending our stuffs to Malaysia, and some were taken during my confinement, which was nearly 4 months agooo hehehhehe, banyang kan lah!

So this Pau is one of it! Talking about this Pau, I just fallen in love with this recipe. I was like kena curse before this. Whenever I tried any pau recipe, it didnt turn out well all the time. Sometime terkecut la, sometime terkeras laa, but this one, wallaaaa! The picture tells i guess..

All I like about this recipe is, it does not require specific measurement. Just agak2 aje ok...
  • 2-3 cups bread flour
  • ** 1 tablespoon sugar
  • **1 heap teaspoon yeast
  • ** 50 ml warm water
  • sufficient water to form dough
  • 2 table spoon vege oil
  • 1 and half teaspoon vinegar
  1. Mix ingredients marked with **. Disolve sugar and let it sit for a while until yeast looks breezing.
  2. Pour mixture 1 into flour. Mix it.
  3. Add in vinegar, oil.
  4. Add in water little by little and form a dough.
  5. Knead to get elastic/smooth dough. What I did, I jut put them into my bread maker and let it do the job.
  6. When it ready, filling as u like. Sit it for while.
  7. Pour few spoons vivegar in the water when steaming. Steam in preheated steamer for 10 - 12 minutes.

Bun & Nugget


This is a combination of bun and nugget recipes. For the bun, I normally will stick to that recipe since i can have it in various sizes and shapes. While for nugget, i use the one from myresipi, but i had them in giant size to suit my bun.

Roti Naik


I was driving back home yesterday, and thinking what to cook. I had chicken in my fridge. Kalau tanya rezan, for sure he will reply 'anything!'. huhhh...was still thinking till i reached home..shall we have butter chicken? paprik ayam? aarrghhh sooo lazy!!! and finally ayam masak kicap came across in my mind! lagi senang! Memang betul2 malas laahhhh!

Then..after cooking, i sat and rest. Switched on my laptop..start surfing net. Then i open my blog. Then i clicked into CMG link, 'wahhhh..got roti mehhhh!' Roti naik! And i just dont understand why suddenly i became sooo bersemangat to bake. It was already 8.15pm at that time & Rezan were still at school..

I suddenly became soooo rajin..went to kitchen, measure all ingredients and damn everything into my BM. Not long after that, Rezan came back and he asked 'buat roti??? what time are you going to bed then?' huhuuuuuu..well that's me...kalau dah nak buat, tak kira waktu! Lepas je siap roti..dok chat sekejap ngan budak tuu...mata dah terlelap! sorry laa brother..wa ngantukk lerr..lu punya pasal lerrr wa buat ini roti! heheheh

This is the recipe, i made half of it and it's yielding 8 buns.

  • 400gm bread flour
  • 100gm hong kong flour
  • 250ml water
  • 50gm milk powder
  • 3/4 tsp bread improver
  • 180gm (brown sugar)
  • 100gm butter
  • 11 gm instant yeast
  • 1tsp vanilla essence
  • drops of yellow food colouring
  1. Mix all ingredients and throw everything in breadmaker for kneading process. Select 'dough' setting and wait till everything done.
  2. Prove for about 45 minutes to 1 hour and knead again for few minutes.
  3. Shape - form balls.
  4. Leave it and let it become double size.
  5. Grease tin and bake with 190 degree celcius for 15-20 minutes.

Tortilla


  • 2 cups plain flour, 3/4 tsp baking powder, salt to taste, and 2 tsb shortening - Mix well with sufficient water, knead to form elastic dough. Form small balls and set aside for about 10 minutes.
  • Roll out a thin layer and toast it on the heated skillet.
  • Tips..cook with high temperature, once you get a 'dot and browning' surface, turn to another surface. Cooking in slow heat will take time to get it cook and and it will turn hard and crispy.

Oat Bran Loaf


Still im using this favourite recipe, but i doubled the measurement, and add 50gm of oat bran and add little bit more water. Otherwise it will turn to dry.

Cakoi


Original recipe was from here.

  • A cup of water
  • 2 cups plain flour
  • 1/4 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 3/4 tsp alum
  • 1/2 tsp soda bicarbonate
  • 1/2 tsp amonia (for cooking) - i dont have this, thus i just ignored this ingedient.
  • 1 tsb oil
  • Lot of oil for deep fry

Method:

  1. Except oil for deep fry, assemble all ingredients into breadmaker, and process with 'dough' mode.
  2. When it done with kneading, devide dough into 2 equal portions and make a cylinder 40cm lengh (approximately). Cover with tea towel or plastic wrap, let it proof for 45 minutes.
  3. Using palm, press both dough into rectangular shape (1cm thick & 5-6cm wide - approximately). Then cut into thinner rectangular (2-2.5cm wide-approximately). See the original recipe for better better explanation (pictures). Again, let it rest for another 10-15 minutes.
  4. Heat oil.
  5. Dip a thin bamboo stick (satay stick) into plain water, and press the stick on top of the dough. Get another one dough, put on top of the watered dough and press with the stick. It's became 'twin' now. See pictures.
  6. Slowly pull the dough into 15-20cm lengh (approximately) and fry into heated oil untill golden brown.

Note: This recipe, using quit a lot of flour for dusting. Otherwiaw, it will sticking on your rolling bench.

Lebanese Bread & Kebab




  1. Assemble all vegies, put in the centre of lebanese bread.
  2. Top with kebab & mozarella cheese.
  3. Roll & press for a while with sandwich maker or grill or what so ever :D, till chesse melted.
  4. Serve!
